Techniques
  • 3 whole scallions
  • 1 cup Greek yogurt
  • ½ cup mayo
  • 1 tsp fresh dill
  • 4 whole large sweet potatoes
  • cold water
Peel the sweet potatoes, cut into uniform wedges and soak in cold water about an hour.
  • 1 whole large onion
  • 2–4 cloves garlic cloves
  • fresh parsley
Pulse the onion in batches until finely chopped; thinly slice the scallions; add grated garlic; pulse the parsley fine.
  • 2 lb boneless skinless chicken thighs
Pulse the chicken thighs a few pieces at a time until they resemble ground meat.
Grinding chicken thighs in the food processor
  • ¾ cup panko breadcrumbs
  • 1½ tsp salt
  • freshly cracked black pepper
  • 2 tbsp Greek yogurt
  • 2 tsp dried thyme
  • 1 whole egg
Combine chicken, onion, scallions, garlic, parsley, panko, salt, pepper, Greek yogurt, dried thyme and a whisked egg; mix well.
Divide into eight equal portions (or twelve) and shape into patties on a parchment-lined tray; chill about 30 minutes so they hold together.

  • 1–2 tbsp white vinegar
  • freshly cracked black pepper
For the dill sauce, mix Greek yogurt, grated garlic, mayo, white vinegar, black pepper and chopped dill.
