Chicken yakitori skewers

Bring equal parts soy and sake to a bubble, add a little mirin and sugar, boil one minute, then take off the heat to cool.

Brush the chicken skewers with the sauce and grill.

Soak wooden skewers about an hour, standing them in a glass of water; skewer right before grilling so they do not dry out. Metal skewers need no soaking and can be loaded in advance.
