Techniques
  • 390 g tomatoes
  • 11 g garlic
  • 15 g ginger
  • 185 g onions
  • 1 can canned chickpeas
Blend the tomatoes, garlic and ginger to a smooth puree.
  • 1 tbsp oil
  • 2 tbsp butter
  • 1 tsp cumin seeds
  • ¼ tsp salt
Heat the oil and butter in a pot; when the butter melts add the cumin seeds, then the very finely chopped onions with a quarter teaspoon of salt.
  • ½ tbsp thick tomato paste
Cook the onions to light brown, not deep brown; add the tomato paste and fry on medium-low for a minute.
  • ½ tsp turmeric powder
Add the turmeric, Kashmiri chili powder, ground coriander and ground cumin; fry on low for a few seconds, then add the tomato puree.
  • 1 tsp Kashmiri red chili powder
  • 2 tsp ground coriander
  • 1 tsp ground cumin
Stir, cover on medium heat for 5 minutes, stir again and cook partially covered until thickened.
  • ⅓ cup chickpeas, saved
Drain and rinse the canned chickpeas (or soak dry chickpeas overnight and cook until tender); set aside a third of a cup.
  • 2 tsp salt
  • 1 tsp sugar
  • 1 tsp garam masala powder
Add the salt, sugar, garam masala and crushed dried fenugreek leaves.
Seasoning and adding the chickpeas
  • 1 tsp dried fenugreek leaves
  • 1 cup hot water
Add the chickpeas and stir to coat and fry in the masala; add the hot water.
  • ½ cup water
Puree the saved chickpeas with half a cup of water and stir the paste into the gravy to thicken it; add the black pepper.
  • ¼ tsp black pepper powder
Cover on low heat for 15 minutes, stirring in between.
  • chopped coriander leaves
  • ⅓ cup heavy cream
Taste and adjust; add a little more sugar if sour, then the chopped coriander leaves and the heavy cream. Cover on low for 5 more minutes.
Adjusting and finishing with cream
Plate, garnish with chopped coriander leaves and drizzle with cream.
  • 1 tbsp butter
  • oil
  • 1 tsp sweet paprika
Melt the butter with a drop of oil in a small pan over low heat; switch off the heat and add the sweet paprika so it does not burn. Drizzle over the chickpeas; serve with naan or any flatbread.
