  • 3 tsp dark soy sauce
  • 1 tbsp potato starch
  • 100 g water chestnuts

Set out half a cup of water and a baking tray lined with parchment paper.
Put a generous teaspoon of filling on a wrapper, compress it with your fingers, wet around the filling and pleat closed. Repeat.
To freeze, freeze them spaced out on the tray first so they cannot stick, then bag them.
Freezing dumplings without sticking

  • 2 tbsp chili oil
  • 1 tsp soy sauce
  • 1 tsp black rice vinegar
Boil the dumplings 3 to 4 minutes, a couple more from frozen.
