Techniques
Bring a pot of water to a boil for the pasta.
  • 3 pieces garlic
  • ½ whole red onion
  • 1 whole roma tomato
Thinly slice the garlic and red onion; quarter the roma tomato and slice the quarters in half.
  • 2 sticks green onion
Chop the green onion and set it aside.
  • 2 tbsp chili oil
Heat the saute pan over medium heat with the chili oil, add the red onions and saute 3 to 4 minutes.
  • ¼ lb fettuccine
Boil the fettuccine about a minute less than the package instructions, about 11 minutes here, stirring occasionally.
Add the garlic and saute another couple of minutes, then the dried chili peppers.
Add the sweet paprika, smoked paprika and cayenne and stir, then the tomato paste and stir again.
  • 5 whole dried chili peppers
  • 1 tsp sweet paprika
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper
  • 1 tbsp tomato paste
Add the roma tomatoes and saute a few minutes; the juices pick up the flavour from the pan.
  • ½ cup pasta cooking water
Transfer about half a cup of pasta cooking water to the pan and simmer the sauce a couple of minutes while the pasta finishes.
  • ½ tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tsp dark soy sauce
Add the maple syrup, soy sauce and dark soy sauce and stir to combine.
Drain the pasta, add it to the sauce with the green onions and fold until the sauce is absorbed and the onions wilt.
  • white sesame seeds
Plate and sprinkle over white sesame seeds.
