Ingredients
Method
Techniques
  • 350 g cooked jasmine rice
  • 4 whole eggs
Beat 4 eggs well. Dice 4 scallions and divide them, reserving the green parts for the end.
  • 4 whole scallions
Turn the heat to maximum and preheat the wok, tilting it in all directions so the whole surface heats, 30 seconds to a minute; an underheated wok makes the rice stick.
Preheating the wok properly
  • oil
When the wok starts smoking, add a generous amount of oil (do not overheat, or the oil can ignite) and swirl to coat.
  • 1 tbsp minced garlic
Add half the scallions and a tablespoon of minced garlic and stir a few seconds; pour in the beaten eggs and mix well.
When the egg is mostly set, drizzle a little more oil around the edges, add the cooked rice and break up clumps until every grain is loose and separate.
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
Season with a tablespoon of oyster sauce and drizzle a tablespoon of soy sauce down the side of the wok so the heat caramelizes it. Toss in the remaining scallions and mix.
