Ingredients
Method
Techniques
  • 400 g pork ribs
  • ¼ tsp salt
  • 1 tsp ground garlic
  • 1 tsp ginger
  • 1 tbsp soy sauce
  • 1 tbsp Chinese cooking wine
  • 2 tbsp sesame oil
  • 4 tbsp sugar
  • 3 tbsp vinegar
  • 2 tbsp soy sauce
Cut the pork ribs into small pieces with one forceful cut each so the cut is flat and leaves no bone splinters.
  • pepper
Pat the ribs dry; marinate with salt, ground garlic and ginger, soy sauce, Chinese cooking wine and pepper. Mix well and rest at least 2 hours, better overnight.
Heat the wok, add sesame oil, and fry the ribs 8 minutes until golden brown, instead of blanching them.
Turn the heat to low, add the sugar and stir slowly until it melts evenly to a caramel color, about 4 minutes; longer turns it bitter.
  • water
Add vinegar, soy sauce and enough water just to cover the ribs.
Bring to a boil on high, then stew on low 10 to 20 minutes until the meat is tender and the sauce still thin.
Turn the heat to high and reduce a few minutes until the water is almost gone and the sauce bubbles like syrup.
  • ½ tsp vinegar
  • sesame seeds
  • coriander
Off the heat, stir in half a teaspoon of vinegar. Plate and garnish with sesame seeds and coriander. Serve with rice or as an appetizer.
