Techniques
  • 1 cup white rice
  • 1 cup milk
  • 1 can evaporated milk
  • 1 can sweetened condensed milk
  • 5 tbsp Mexican chocolate powder
Blend one cup of milk with the evaporated milk, the condensed milk and the chocolate powder until combined.
  • 2 cup water
  • salt
  • 2 whole cinnamon sticks
  • ¼ cup sugar
In a saucepan, combine the rinsed rice, two cups of water, a pinch of salt, the cinnamon sticks broken in half and a quarter cup of sugar; bring to a simmer.
Reduce to low, cover and cook 10 to 12 minutes, stirring every five minutes, until the water is absorbed.
  • ½ cup milk
  • ½ tsp vanilla
Add the chocolate milk and another half cup of milk, turn the heat up a little, add the vanilla, and bring back to a simmer.
Cook about 10 minutes more, stirring constantly, until the rice is fully cooked and soft.
Serve warm, or cool completely for a more pudding-like result; thin with milk if too thick.
