Cut the banana into four pieces. Melt the sugar in a hot non-stick pan, add the bananas cut side down and cook until the sugar caramelizes.
  • 1 whole firm banana
  • 1 tbsp sugar
  • 1 tbsp butter
Add the butter and saute a minute; flip and cook two minutes more.
Deglaze with the juice of half an orange and flambe with the dark rum (optional); turn off the heat and cool.
  • ½ orange orange juice
  • ¼ cup dark rum
  • dark chocolate
  • Vienna bread
  • butter
Chop the dark chocolate; halve the Vienna bread and brush with butter.
  • orange marmalade
Toast the bread on a hot griddle or panini press, weighted with a heavy pan, on both sides until golden; spread with orange marmalade if wanted.
Top with a little chocolate, two banana pieces and their glaze, more chocolate and the other half of bread.
Filling and pressing
Return to the pan, weight carefully and cook until the chocolate melts without overflowing; flip, cut in half and serve.
