Techniques
  • 270 g all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 1 tsp salt
Whisk the flour, cornstarch, baking soda and salt together in a large bowl and set aside.
  • 133 g granulated sugar
  • 220 g brown sugar
  • 170 g butter
In a second bowl whisk the granulated sugar, brown sugar and the melted cooled butter for about 30 seconds until smooth and thick.
  • 2 whole eggs
  • 15 ml vanilla
Whisk in the eggs and the vanilla for about a minute, until smooth.
Stir the dry into the wet with a spatula until almost combined, leaving some flour visible.
Combining wet and dry, mix-in options
  • 2 cups chocolate chips
Stir in the chocolate chips, holding back about a quarter cup, until the last of the flour disappears.
Adding the chocolate chips
Line the eight by eight inch pan fully with parchment, spread the batter in and level it with a spatula.
Lining an 8x8 pan with parchment
Sprinkle the reserved quarter cup of chocolate chips over the top.
Spreading and topping the batter
Bake about 50 to 55 minutes, until a skewer in the centre comes out with a few crumbs and the edges are set. Cover loosely with foil at the 30 minute mark. Subtract a few minutes for a fudgier result.
  • flaked sea salt (optional)
Cool, finish with a sprinkle of flaked sea salt if you like, lift out of the pan and cut into pieces.
