Techniques
  • 250 ml Guinness
  • milk
Pour the Guinness into a wide bottom saucepan and heat it.
Melting butter into hot Guinness
  • 250 ml unsalted butter
Add the butter a few pieces at a time and melt it into the warm Guinness.
  • 75 g cocoa powder
  • 400 g sugar
Whisk in the cocoa powder and the sugar until it looks like chocolate sauce.
  • 142 ml sour cream
  • 2 whole eggs
  • 1 tbsp vanilla extract
Mix the sour cream, eggs and vanilla extract together with a fork, pour into the saucepan and whisk.
  • 275 g all purpose flour
  • 2½ tsp bicarbonate of soda
Whisk in the flour and the bicarbonate of soda.
Pour the batter into a greased springform pan lined with parchment paper.
Bake at 350F for 45 minutes; the recipe calls for 180C, which converts to 356F.
Leave the cake in the springform pan on a wire rack and let it cool completely, because it is a damp cake.
  • 300 g Philadelphia cream cheese
Beat the cream cheese, sieve the powdered sugar over it and mix.
  • 150 g powdered sugar
  • 125 ml heavy cream
Stream in the heavy cream while beating until it reaches a spreading consistency; add an extra spoonful of sugar if it is loose.
Turn the cooled cake out, peel off the parchment and spread the frosting over the top to resemble the frothy head on a pint.
