Techniques
- 4 oz semi-sweet chocolate bar
- 113 g unsalted butter
- 330 g granulated sugar
- 1 tsp pure vanilla extract
- ¼ tsp salt
Beat the softened butter, sugar, vanilla and salt until the sugar is incorporated and fluffy.
- 3 whole eggs
- 2½ cup all purpose flour
- ¾ cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 cup walnuts
Whisk together the flour, cocoa and baking powder; chop the chocolate and the walnuts.
Add the dry ingredients in two or three batches; toss the nuts and chocolate with the last batch and mix until a dough forms.
- all purpose flour
Turn the sticky dough onto a lightly floured counter without adding too much flour, divide in two, and flatten each log on a parchment-lined tray to half to three quarters of an inch thick, spaced apart. Alternatively chill the dough as a disc 30 to 40 minutes.
Bake at 325F on the center rack 30 to 35 minutes, until firm to the touch in the center; these took 35.
Cool, ideally completely (here slightly warm), then slice on the diagonal with a serrated knife and lay on two parchment-lined trays.
Bake again at 325F about 10 to 15 minutes, up to 20 for crisper; these took 10 to 12. Cool completely.
