  • 500 g Middle Eastern style white cheese
  • 250 g Turkish kashar
Shred 250 g kashar on the large side of a grater; crumble the white cheese over it and mix.
The two-cheese filling
  • 60 g parsley
Pull 60 g parsley through the holes of a grater to strip the leaves, then mince small.
  • 1 tbsp nigella seeds
  • ½ tsp black pepper
  • 1 whole egg
  • 1 package pre-cut yufka triangles
Add the parsley, 1 tbsp nigella seeds, 1/2 tsp black pepper and, optionally, an egg; mix thoroughly.
Lay a yufka triangle rounded edge towards you; leaving about 2 cm, lay a line of cheese filling most of the way across, leaving 3-4 cm at the edges.
Tuck both sides over the filling, fold the bottom over and roll away until about 3 cm from the end; dab the tip with sauce or egg wash and finish rolling.
  • sauce
  • oil
Heat enough oil to shallow fry in a pan over medium heat; set a wire rack over paper towels on an oven tray.
Test the oil with a borek: it should just bubble.
Fry 4 at a time over medium heat, turning every 15 to 30 seconds, 2 to 3 minutes in all until golden brown.
Drain on the rack a couple of minutes and serve right away.
