Add the dry ingredients to the wet a little at a time and whisk.
  • 1 cup raisins
When a little flour is left, toss the raisins through it, then add the remaining flour and raisins and fold it all together with a spatula rather than a whisk.
  • olive oil
Grease a 9 by 13 inch baking pan with a little olive oil or baking spray and transfer the batter.
Bake on the centre rack of a preheated 350F oven for about 35 to 40 minutes, until a toothpick comes out clean or with a few moist crumbs.
Cool completely in the pan, about 30 to 40 minutes, then cut into serving sizes.
