Ingredients
Method
Techniques
  • 550 g sifted flour
  • ½ cup sugar
  • salt
  • nutmeg
Into the stand mixer put 550 grams of sifted flour, half a cup of sugar, a pinch of salt, a little grated nutmeg, a tablespoon of yeast, a tablespoon of vanilla, two eggs and five tablespoons of butter.
  • 1 tbsp yeast
  • 1 tbsp vanilla
  • 2 whole eggs
  • 5 tbsp butter
  • 1 cup warm milk
Begin mixing and slowly add one cup of warm milk, microwaved 45 seconds, until the ingredients are incorporated.
Turn the speed up to medium and mix 10 minutes until the dough is smooth; it stays a little sticky, which is what you want.
Grease a bowl well, shape the dough into a big ball, grease the top, cover and rest one hour in a warm place.
  • 1 stick butter
Grease the baking dish, sides included.
Greasing the dish and the cinnamon sugar filling
  • 1½ cup brown sugar
  • 3 tbsp cinnamon
Mix one cup and a half of brown sugar with three tablespoons of cinnamon.
Punch all the air out of the risen dough and roll it into a big rectangle about a quarter of an inch thick.
Spread the room temperature stick of butter evenly, sprinkle over the cinnamon sugar, breaking down any lumps, and press it down.

Roll it up the long way, stretching the edge first, and butter the edge so it seals.
Trim the end and cut the log in the middle and then down into even rolls.
Place them in the greased dish with space to rise, cover and leave in a warm place 30 to 45 minutes until doubled.
Preheat the oven to 350 and bake 18 to 20 minutes.
  • 4 tbsp butter
  • 4 oz cream cheese
  • 1 tbsp vanilla extract
  • 1½ cup powdered sugar
  • 2 tbsp milk
Beat four tablespoons of butter with four ounces of room temperature cream cheese until creamy, then add a tablespoon of vanilla extract, one cup and a half of powdered sugar and two tablespoons of milk and mix.
Cool the rolls about five minutes, then spread the icing over them.
