Ingredients

Techniques
- 390 g cake flour
- ½ tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
Combine the cake flour, baking soda, baking powder and salt in a large bowl and whisk to distribute the leavening.
- 113 g softened butter
- 120 ml oil
- 400 g granulated sugar
Combine the softened butter, the oil and the granulated sugar in the bowl of a stand mixer and mix on medium about three minutes, until light and creamy, scraping down as needed.
- ½ tsp coconut extract
Add the egg whites and mix on medium about a minute until well combined, then scrape the bowl down.
- butter
Butter and flour or spray the three pans and line them with parchment rounds.
Preparing the pans
Mixing on low, add the dry ingredients and the coconut milk in alternating batches, starting and ending with the flour, until just combined.
Finish the batter by hand with a spatula, scraping the sides and bottom and folding together without overmixing.
Distribute evenly between the three pans, weighing them if you can, and level each with an offset spatula.
Bake at 350 for 30 to 32 minutes, rotating the pans at 20 minutes and loosely covering them with foil so they do not take on too much colour; they are done when the centre springs back when touched gently.
- 226 g cream cheese
- 226 g butter
- ¼ tsp salt
Cream the cream cheese, the softened butter and the salt on medium speed about three minutes until beautifully combined.
Once the layers are cool, spread a cup of frosting over the first layer, then stack and repeat.
Stacking and frosting the layers
Spread the rest of the frosting over the top and sides in a thin, even layer, for coverage rather than looks; it is the glue for the coconut.
- 2½ cups sweetened shredded coconut
Crumble about two and a half cups of shredded coconut over the top, breaking up any larger balls, then crumble it in your hand and pat it gently onto the sides, collecting what falls and patting again until there are no bald spots.
