Techniques
  • 3 whole medium sized potatoes
Cut the peeled, dried potatoes into small bite-sized cubes.
  • water
  • sea salt
Spread in a single layer in a stock pot, add water to barely cover, salt generously and bring up over high heat.
  • 150 g mayonnaise
  • 3 cloves garlic
  • 10 ml fresh lemon juice
  • 15 ml extra virgin olive oil
  • freshly cracked black pepper
For the alioli, combine the mayonnaise, finely grated garlic, lemon juice and olive oil in a large bowl; season with salt and pepper and whisk until creamy.
Cook the potatoes 15 to 20 minutes until just cooked through, testing with a toothpick.
Drain in a colander and rinse under cold water to stop the cooking and bring to room temperature; shake off the water.
Fold the potatoes gently into the alioli until coated; taste for seasoning.
  • 35 ml extra virgin olive oil
  • 225 g cod fillets
Heat the olive oil in a large fry pan over medium heat. Pat the cod fillets completely dry and season both sides with salt and pepper.
Fry the fillets in a single layer, evenly spaced, about 4 minutes per side until just cooked through.
  • jarred roasted red bell peppers
  • chives
Plate the garlic potatoes, top with a cod fillet, a couple of strips of roasted red pepper, and chopped and whole chives.
