Techniques
  • 1 box lemon jello
  • ½ cup boiling water
  • ice cubes
  • 1 package frozen chopped spinach
Dissolve the lemon jello in half a cup of boiling water, stirring well; add ice cubes to chill it, making up a cup by displacement.
Dissolving and quick-chilling the jello
Thaw the frozen spinach under hot water and drain out all the moisture, or the ring will not set.
  • 1 whole onion
  • ½ cup celery
Dice the onion fine; cut the celery into matchsticks and then across, fine.
  • 2 tbsp lemon
  • 1 cup small curd cottage cheese
  • ¾ tsp salt
  • ½ cup mayonnaise
Add the lemon juice, catching the seeds, the cottage cheese, the salt and the mayonnaise.
If the jello has thickened too far to mix smoothly, warm it slightly in the microwave without letting it get hot, since everything is raw.
Re-melting the jello and mixing
Pour the jello over and stir well to distribute the spinach.
Grease a bundt pan, pour in the mixture and chill overnight until solid.
Molding and chilling overnight
Dip the mold briefly in warm water in the sink to melt the surface layer and unmold; too long and it melts too much. If it breaks, return it to the mold and chill a couple of hours, then dip for about a minute and try again.
