Techniques
Heat the oven to 350F.
Oreo crumb crust in the food processor
  • 275 g Oreos
Pulse 24 Oreos in a food processor about 30 seconds until fine.
  • 70 g unsalted melted butter
Add 70 g melted unsalted butter and pulse about 10 seconds to a cohesive mixture like very wet sand.
Grease a nine by nine inch baking dish with the butter left in the bowl and line it with a parchment sling over three sides.
Lining the pan and pressing the base
Tip in the Oreo base, shimmy it level and press it down with a flat bottomed glass into an even layer.
Freeze the base at least 20 minutes while the filling is made.
  • 210 g all purpose flour
  • ¾ tsp baking powder
  • ¼ tsp baking soda
  • ¾ tsp salt
Whisk the flour, baking powder, baking soda and salt together and set aside.
  • 113 g unsalted room temperature butter
  • 113 g cream cheese
  • 220 g light brown sugar
Beat the butter, cream cheese and brown sugar on medium for about three minutes until light and fluffy, scraping the bowl down.
  • 1 whole egg
  • 2 tsp vanilla
Add the egg and two teaspoons of vanilla and beat in, then scrape the bowl down.
Egg, vanilla and the flour
  • 12 whole Oreos
With the mixer on low, add the flour in three additions and stop while big streaks of flour remain.
  • 45 g semi-sweet chocolate chips
  • 45 g white chocolate chips
Add 12 quartered Oreos, the semi-sweet chips and the white chocolate chips and mix on low until just coming together.
Scrape down and finish with a gentle fold by hand so the cookies stay in big pieces.
Spread the filling over the frozen crust in an even layer with an offset spatula.
  • 12 whole Oreos
Break 12 more Oreos into big pieces over the top and press them in, then sprinkle over a quarter cup of chocolate chips.
  • ¼ cup chocolate chips
Bake at 350F for 30 to 35 minutes, until a skewer in the centre comes out mostly clean with a few crumbs.
