Saute 225 grams of small white button mushrooms in the bacon fat until golden brown, then remove.
- 12 whole pearl onions
- 2 tbsp butter

- salt
Add 12 peeled pearl onions with two tablespoons butter, a pinch of sugar and a pinch of salt, and just enough water to cover.
- water
Cover with a round of parchment trimmed to the pan, bring to a boil, then simmer until the water has all evaporated and the onions are golden brown; remove.
