Techniques
  • 5 pads nopales
  • 2–3 lb pork rib tips
  • 2 tsp garlic salt
  • 2 tsp black pepper
  • 8–10 whole chiles de arbol
Peel the nopales by pulling the knife back against the thorns on both sides; trim the ends and sides.
Rinse the cleaned nopales and cut into strips; set aside.
Cut the pork rib tips into single ribs.
Starting the pork rib tips
  • salt
  • ½ cup water
  • 2 whole bay leaves
In the pan season the ribs with salt, garlic salt and black pepper; add half a cup of water and two bay leaves.
Over medium-high heat, mix, cover and cook about 25 to 30 minutes.
  • 2 whole roma tomatoes
  • 6 whole tomatillos
  • ½ whole onion
Roast the roma tomatoes, tomatillos and half onion until charred all around; transfer to the blender cup.
  • 2 cloves garlic cloves
Roast the garlic cloves briefly and add to the blender cup.
Turn up the heat and cook the chiles de arbol until fragrant, without burning them or the sauce turns bitter; add to the blender.
  • cilantro
  • ½ tsp oregano
  • 1 tsp salt
Add a very small handful of cilantro, half a teaspoon of oregano and a teaspoon of salt; blend smooth with one and a half cups of water.
  • 1½ cup water
When the water has evaporated and the ribs have rendered their fat, fry them 5 to 10 minutes, stirring constantly, until golden.
  • onion
  • salt
Remove some of the grease; add a little piece of onion and the nopales, season with a little salt, cover and cook five minutes until the nopales change colour.
Add the salsa, mix and bring to a simmer; taste and adjust the salt.
Reduce to low and cook another 10 to 15 minutes. Serve with rice and beans.
