  • butter
  • 1 whole leek
Melt butter in a pan over medium heat. Dice the white part of a leek and add it with a big pinch of salt.
  • salt
Sweat the leeks over medium heat 6 to 7 minutes without browning, just to soften.
  • white wine
  • lemon juice
Deglaze with white wine and a little lemon juice; stir and cook until the liquid has almost boiled away, about 2 minutes.
  • creme fraiche
  • ¼ cup cream
Add the creme fraiche, and cream if using.
Why creme fraiche instead of cream
  • cayenne
  • tarragon mustard
Add a little cayenne and tarragon mustard, stir, reduce the heat to low and hold while preparing the salmon.
Seasoning the sauce with cayenne and tarragon mustard
  • wild salmon
Slice the salmon into even slices a quarter to a half inch thick.
Lay the salmon on the barely simmering sauce; after about 30 seconds start moving it around gently until it starts to break up, then turn off the heat.
  • cilantro
Stir in a handful of fresh herbs; taste and adjust seasoning.
  • spaghetti
Boil spaghetti timed to finish with the sauce; combine and garnish with a little extra cayenne.
