Techniques
  • 45 ml extra virgin olive oil
Heat a large fry pan over medium heat with the olive oil.
  • 1 whole onion
  • 4 cloves garlic
Finely chop the onion and roughly chop the garlic and add them to the hot pan, mixing continuously so they do not brown too quickly.
  • 9 g all-purpose flour
After 2 to 3 minutes, once the onion is slightly translucent and the garlic fragrant, add the flour and mix for 2 minutes to cook off the raw flavour.
  • 120 ml vegetable broth
  • 180 ml milk
Add the vegetable broth, then the room temperature milk.

Mix gently 4 to 5 minutes, until slightly creamy.
  • 1 jar cooked butter beans
Drain the jar of butter beans into a colander and rinse under water.
Add the beans to the pan, season with sea salt and black pepper and mix gently.
  • sea salt
  • black pepper
Lower to a low heat and simmer about 5 minutes, mixing every minute or so, so the cream sauce does not form a film on top.
  • 30 g grated cheese
Turn off the heat and add the grated cheese; adding it any sooner would separate the fats and lose the creamy texture.
Cheese and lemon off the heat
  • 10 ml fresh lemon juice
Squeeze in the lemon juice and give one final gentle mix.
  • black pepper
  • chopped chives
Transfer to a serving dish and top with cracked black pepper and chopped chives.
