Ingredients
Method
Techniques
  • 1¼ lb large de-veined de-shelled shrimp with the tail on
  • 1 cup buttermilk
  • ¾ cup flour
  • ¼ cup cornstarch
  • 2 tbsp hot honey
  • buffalo sauce
Soak large deveined, shelled, tail-on shrimp in buttermilk with a little buffalo sauce and a pinch of salt; cover and refrigerate about 25 minutes.
  • salt
  • seasoning
  • frying oil
Stir together the dredge of flour, cornstarch, seasoning and salt; heat the frying oil.
Working a few at a time so the flour does not get gunky, shake off excess buttermilk and coat the shrimp well in the dredge.
Set on a parchment-lined baking sheet; do not dredge ahead of time or the wet shrimp absorb the flour and turn soggy.
Do not dredge ahead
Fry a few at a time so the oil temperature does not drop, about a minute and a half per side, until deeply golden brown and crispy.
  • buffalo sauce
Mix hot honey (or regular honey) with a little buffalo sauce for the dipping sauce.
