Ingredients
Method
Techniques
- 45 ml extra virgin olive oil
Heat a large fry pan over medium heat and add the olive oil.
- 1 whole onion
- 6 cloves garlic
Add the onion to the hot pan and mix continuously so it does not brown too quickly.
- sea salt
After two to three minutes, once the onion is slightly translucent, add the sliced mushrooms and a pinch of sea salt and mix.
Saute eight to 10 minutes until the mushrooms are lightly browned, mixing every one to two minutes.
Garlic, thyme and red pepper
- ½ g dried thyme
- ¼ tsp crushed red pepper
Add the chopped garlic, the dried thyme and the crushed red pepper and mix continuously about one minute until the garlic is fragrant, then turn off the heat.
- 60 g all purpose flour
Whisk the flour and baking powder together in a large bowl.
- 2 g baking powder
- 1 whole egg
- 90 ml club soda
Make a well in the middle, crack in the egg and whisk, then add the club soda and whisk to a smooth batter.
- 15 g grated cheese
Add the sauteed mushrooms once they are at room temperature, then the grated cheese and chopped chives.
- 5 g chopped chives
- sea salt
- freshly cracked black pepper
Season with sea salt and black pepper and mix well; adjust with liquid or flour if the batter is too thick or thin.
- 90 ml extra virgin olive oil
Heat the same fry pan over medium and add the olive oil for frying.
After a couple of minutes, once the oil is hot, add spoonfuls of batter in a single layer, evenly spaced, cooking in batches so the pan is not crowded.
Fry about three minutes per side until golden and crispy, transferring each batch to a dish with paper towels.
- 120 g mayonnaise
- 1 cloves garlic
Add the mayonnaise to a bowl and finely grate in the garlic.
- 10 ml fresh lemon juice
- 15 ml extra virgin olive oil
- sea salt
- freshly cracked black pepper
Squeeze in the lemon juice, drizzle in the olive oil, season with sea salt and black pepper and whisk to a creamy sauce.
