  • water
Fill a large saucepan to about halfway with water, season generously with sea salt and heat on high.
  • sea salt
  • 115 g pasta
Measure out 115 g of small pasta shells.
Once the water boils add the pasta, stir, and cook until just al dente, following the package instructions.
  • 60 g all purpose flour
  • 2 g baking powder
  • 2½ g onion powder
  • 3 g garlic powder
  • 1¼ g sweet smoked Spanish paprika
Whisk the flour, baking powder, onion powder, garlic powder and smoked paprika together in a large bowl.
  • 1 whole egg
  • 90 ml club soda
Make a well in the middle, crack in the egg and whisk, then add the club soda and whisk to a smooth batter.
  • 120 g shredded cheese
  • 8 g Dijon mustard
  • 5 g chopped chives
Stir in the shredded cheese, Dijon mustard and chopped chives, then season with sea salt and black pepper and mix well.
Cheese, mustard and chives
  • sea salt
  • freshly cracked black pepper
Remove the pasta from the heat once al dente, drain into a colander and rinse under cold water to stop the cooking and bring it to room temperature.
Shake off the excess water, add the pasta to the batter and mix until well combined.
  • 60 ml extra virgin olive oil
Heat the olive oil in a large fry pan over medium heat.
After a couple of minutes, once the oil is hot, add spoonfuls of batter in a single layer, evenly spaced, cooking in batches so the pan is not crowded.
Gently push down on each fritter and cook 3 to 4 minutes per side until golden and crispy.
Transfer each finished batch to a dish lined with paper towels; to hold them warm, put them in a preheated oven at its lowest setting.
  • 2 cloves garlic
  • 0.17 g saffron threads
  • sea salt
For the mayo alioli, pound the roughly chopped garlic, saffron threads and a pinch of sea salt in a mortar with a pestle until well mashed; a food processor or hand blender also works.
  • 120 g mayonnaise
  • 5 ml fresh lemon juice
  • 15 ml extra virgin olive oil
Add the mayonnaise, lemon juice and olive oil, season with sea salt and pepper, and whisk to a creamy sauce.
  • sea salt and freshly cracked black pepper
Transfer the alioli to a serving dish and arrange the fritters around it.
