Techniques
  • 30 ml extra virgin olive oil
Heat a saucepan over medium heat with 30 ml extra virgin olive oil.
  • 3 cloves garlic
After a couple of minutes add the roughly chopped garlic and mix continuously so it does not brown too quickly.
  • 2½ g sweet smoked Spanish paprika
After about 30 seconds, once the garlic is fragrant, add the smoked paprika and mix quickly.
  • 425 g canned tomato sauce
  • 1 g dried parsley
  • sea salt
  • freshly cracked black pepper
Add the canned tomato sauce and dried parsley, season with sea salt and black pepper and mix.
Lower to a low heat and leave it simmering.
  • 2 can canned sardines
Gently drain two cans of sardines in a fine sieve set over a bowl, taking care not to break them apart.
  • 60 g all-purpose flour
  • 1 whole egg
  • 15 ml water
Put the flour in a shallow bowl; crack the egg into a second with a tablespoon of water, salt and pepper and whisk.
  • sea salt
  • freshly cracked black pepper
  • 120 g plain bread crumbs
  • 3 g garlic powder
  • 1 g dried parsley
Mix the bread crumbs with garlic powder and dried parsley in a third bowl.
  • 60 ml extra virgin olive oil
Heat a large fry pan over medium heat with 60 ml extra virgin olive oil.
Coat each sardine in the flour, then the egg wash, then the bread crumbs, fully coated at each stage and handled gently.
Fry in a single layer, evenly spaced, about 2 minutes per side, about 4 minutes in total, until golden and crispy.
Transfer to a dish lined with paper towels.
  • lemon wedges
  • fresh parsley
Spoon the simmering tomato sauce into a shallow serving dish, arrange the sardines around it and garnish with lemon wedges and fresh parsley.
