Techniques
  • salt
  • freshly ground black pepper
  • granulated garlic
  • cayenne pepper
Mix the spice blend: salt, black pepper, granulated garlic and cayenne.
The four-spice blend
  • 3 whole large eggs
  • ¼ cup water
  • 2 tbsp spice blend
  • 1 whole whole cut-up chicken
Whisk the eggs and water with 2 tablespoons of the spice blend.
Add the chicken pieces, toss to coat, push them down, cover with plastic and refrigerate at least overnight; 24 hours here. Toss two or three times if using a bowl.
  • flour
  • salt
Season flour with salt. Just before frying, toss each piece in the flour until completely coated and shake off the excess; do not flour all the batches at once.
Seasoned flour, right before frying
  • vegetable oil
Fry in vegetable oil at 350, starting the breasts three or four minutes ahead, then thighs, legs and wings, largest to smallest. Check after a minute they are not sticking.
Fry about 15 minutes in all, depending on size and oil temperature, keeping the heat medium-high to high so the oil recovers toward 350 (325 is fine); here about 16 minutes.
Remove in reverse order, wings first, with tongs for small pieces and a spider for large ones; drain on a rack.
Cool at least five or ten minutes before eating.
