Techniques
  • ¾ cup light brown sugar
  • 3 whole very ripe bananas
In a big bowl mash the bananas into the brown sugar with a fork; a few chunks are fine.
  • 2 whole eggs
  • 4 oz unsalted butter
  • 4 tbsp light olive oil
  • 2 tsp pure vanilla extract
  • 1 tsp instant coffee
Whisk in the eggs, then the melted butter, olive oil, vanilla and instant coffee until smooth.
  • 1 cup flour
  • ½ cup Dutch processed cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
Whisk the flour, cocoa, baking soda and baking powder in another bowl; add to the wet ingredients in batches, whisking until each is incorporated.
Dry ingredients and Dutch cocoa
  • dark chocolate chunks
Toss the chocolate chunks in the last couple of tablespoons of dry mix and fold in with a spatula.
  • baking spray
Spray a loaf pan, line with parchment, spread the batter evenly and cover the whole top with chocolate chips.
Lining the loaf pan and topping
Bake on the center rack at 350F for about 40 minutes, until a toothpick comes out clean or with a few moist crumbs; do not overbake or it dries.
Run a knife around the edges, cool in the pan about 20 minutes, lift out and cool completely before slicing.
