  • 150 g light brown sugar
Add the sugar and light brown sugar and cream together on medium speed with the paddle for two minutes.

Eggs, vanilla, lemon and the dry ingredients
Turn up to medium speed for two minutes, scraping down the bowl halfway through.
  • 270 g all purpose flour
On low speed add the flour while the mixer runs, then the baking soda, salt and a pinch of cinnamon; mix about 45 seconds and do not over mix.
  • 1 tsp baking soda
  • 1 tsp salt
  • cinnamon
  • ½ cup rolled oats
Add the rolled oats and mix about 10 seconds.
  • 2⅔ cup chocolate chips
Mix in the chocolate chips.
Chocolate chips and walnuts
  • 1¾ cup chopped walnuts
Set aside some dough for anyone who does not want walnuts, then mix the chopped walnuts into the rest, using judgement on how much goes in.
Scoop around three tablespoons of dough per cookie, all roughly the same size, onto a baking sheet lined with a baking mat, spaced two inches apart.
Scooping and freezing the dough
If the dough is soft and likely to spread, freeze the dough balls about an hour to firm them up; frozen unbaked cookies go straight into the oven with no need to thaw.
Press down firmly on the dough balls before baking to flatten the tops.
Bake at 300F for 20 to 23 minutes, until the edges are golden brown and the centre is still soft.
Rotate each pan and swap the shelves at the halfway point so they bake evenly.
Half batch: cream 113 grams of softened butter with 82 grams of white sugar and 75 grams of light brown sugar for two minutes on medium.
Half batch: add one egg, three quarter teaspoon of vanilla and a pinch of fresh lemon juice; low speed 30 seconds then medium two minutes, scraping down the sides.
Half batch: whisk 140 grams of all purpose flour with 3 grams of salt, 3 grams of baking soda and a pinch of cinnamon, and mix it in with 22 and a half grams of rolled oats on low speed for 40 to 45 seconds.
Half batch: stir in 233 grams of chocolate chips, split the 654 grams of dough into two 327 gram halves and work 55 grams of chopped walnuts into one half.
Cool the baked cookies in the baking sheets for an hour.
