Ingredients
Method
Techniques
  • 3 oz ground pork
  • 1 tbsp minced garlic
  • 30 g dried shrimps
Soak the dried shrimp 30 minutes, drain and roughly mince.
  • 1 lb green beans
  • minced ginger
  • dry hot chilies
Snap the tips off the green beans, pull off as much of the tough fibre as possible, and break into short pieces.
  • 1½ tbsp oil
Heat the wok a little, add 1.5 tablespoons oil and the green beans without waiting for the oil to get hot; stir fry 5 to 8 minutes on medium-low until the skins blister and burn in spots ('tiger skin'). Do not add water; lower the heat if burning too fast.
  • salt
Salt the beans now so they take the seasoning before the meat goes in; remove and set aside.
  • 1 tbsp oil
Add one tablespoon more oil; fry the garlic, ginger and dried chilies until fragrant.
Aromatics, pork and shrimp
Add the ground pork and minced shrimp and stir about two minutes.
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • ½ tsp salt
Return the green beans; add 1 tablespoon soy sauce, 1 teaspoon sugar and half a teaspoon salt; mix well and plate.
