  • ½ tsp salt
  • ¼ tsp white pepper
  • 2 tsp oil
  • 1 clove grated garlic
  • 1 tsp grated ginger
  • 1 tsp sugar
  • 2 whole eggs
  • 2 cup chicken stock
Crack and beat 2 eggs. Pour 2 cups chicken stock into a clean pot with some white part of spring onion and bring to a boil.
  • white part of the spring onion
  • 1½ tbsp cornstarch
  • 1½ tbsp water
Mix 1.5 tbsp cornstarch with 1.5 tbsp water. Pour slowly into the boiling stock while stirring so it doesn't clump; it thickens slightly in under a minute.
Stir while pouring in the egg to form thin, silky strands.
  • spring onion
Season with salt and white pepper to taste; serve in a bowl topped with spring onion.
  • 1 whole tomato
Variation: finely dice a tomato. Heat oil in the pot with grated garlic, grated ginger and a little white spring onion until fragrant.
Variation: add the tomato and saute about a minute until saucy; season with sugar and salt.
Variation: bring to a boil (with the stock), thicken with the cornstarch water, stir in the egg, and serve with spring onion.
