  • Chinese chives
  • cabbage
  • hot chilies
Shred the carrot and cabbage thin, cut the Chinese leeks and chives into short strips, chop the hot chilies, and put them all in a big bowl.
  • 4 oz ground pork
  • 1–2 tsp oil
  • salt
  • black pepper
Cook the ground pork in the wok in 1 or 2 teaspoons of oil over medium heat, stirring two minutes, and season with salt and black pepper, then add it to the bowl.
Pre-cooking pork and adding shrimp
  • shrimp
  • 5 whole eggs
  • 2 tsp oyster sauce
  • 1 tbsp soy sauce
  • black pepper
Add the peeled shrimp raw, then the beaten eggs, oyster sauce, soy sauce, black pepper and salt, and mix everything together.
  • ¼ tsp salt
  • 1 tbsp vegetable oil
Heat the wok on high about 10 seconds, add the vegetable oil, then turn the heat to low because egg burns easily.
Pour in about half a cup of the mixture and fry on low 1 or 2 minutes each side until both sides are golden brown.
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tbsp corn flour
  • 1 tsp white pepper
  • 1 cup water
For the sauce, combine the oyster sauce, soy sauce, sugar, corn flour, white pepper and water in a small sauce pot and mix.
The optional gravy
Cook on medium until it bubbles, then turn to low and keep stirring until thick.
Turn off the heat and pour the sauce over the egg foo young.
