Techniques
- 1 tsp Kashmiri red chilli powder
- ½ tsp turmeric powder
- 1 tsp ground coriander
- ½ tsp ground cumin
- 2 whole green cardamoms
- 2 whole cloves
- 1 whole chopped onions
- ½ tsp garam masala
- eggs
- turmeric powder
- red chilli powder
Make a few slits in the surface of the boiled eggs; rub with turmeric, red chilli powder, salt and about a teaspoon of oil; rest 15 minutes or more.
- salt
- 1 tsp oil
- 4 tbsp plain, unflavoured yogurt
Mix four tablespoons of yogurt with Kashmiri chilli powder, turmeric, ground coriander, ground cumin and four tablespoons of water until smooth.
The yogurt spice mix
- 4 tbsp water
- 3 tbsp oil
Heat three tablespoons of oil on medium-high; fry the eggs on medium 2 to 3 minutes until golden, then remove.
- cinnamon stick
- salt
Lower to low and add green cardamoms, cloves and a small cinnamon stick, then chopped onions with a sprinkle of salt; fry until pale and soft, not browned.
- 1 tsp finely grated garlic
- 1 tsp finely grated ginger
Add a teaspoon each of grated garlic and ginger and fry 2 to 3 minutes on medium until it smells fried.
- water
Take off the heat, add a splash of water, add the yogurt and stir immediately and continuously on very low heat until bubbles appear at the sides, so the yogurt does not curdle.
Adding yogurt without curdling
- tomato paste
Raise to medium; add a little tomato paste if using and stir until the oil separates at the sides; add sugar.
Tomato, sugar and water
- sugar
- 1 cup water
Add a little less than a cup of water rinsed through the yogurt bowl, and salt; cover on medium-low 5 minutes.
- salt
Add garam masala, then the eggs, and a tiny pinch of crushed kasuri methi; taste and adjust salt.
- kasuri methi
- chopped cilantro
Cover on low 5 to 6 minutes so the gravy seeps into the eggs; finish with chopped cilantro.
