Techniques
  • 1½ lb ground beef
  • 1 tbsp water
  • ½ tsp kosher salt
  • ½ tsp baking soda
Whisk the water with the kosher salt and baking soda, massage it into the ground beef by hand and let it sit at room temperature 15 minutes to improve texture and moisture retention.
  • 2 tbsp neutral flavored oil
Saute the beef in the neutral oil in a nonstick pan over medium-high heat, draining excess fat if it starts to swim.
  • 1 tbsp kosher salt
  • 2 tsp chili powder
  • 2 tsp all-purpose flour
  • 1 tsp sugar
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp onion powder
Once nearly cooked through, sprinkle the taco seasoning mixture evenly over the beef and let the spices toast about 30 seconds.
  • ½ tsp garlic powder
  • ¼ cup water
  • 1½ tsp beef bouillon
  • 1 tbsp tomato paste
Add the water, beef bouillon and tomato paste and cook one to two minutes until thickened and glossy.
  • hot dogs
  • ⅓ lb burger patty
Griddle the hot dogs.
  • salt and pepper
  • cheese
Shape the burger into an ellipse, sear it on a smoking hot griddle, season with salt and pepper, flip, add two slices of cheese, squirt water beside it and cover to melt.
On parchment paper set in a rimmed baking sheet, lay a burrito-grade tortilla and cover it with shredded cheddar and pepperoni.

Lay the hot dogs across, cutting one in half to avoid tenting, and fill the gaps with taco meat.

  • romaine
Top with sliced tomatoes and torn romaine, then the burger.
Fold the tortilla over and top with shredded low moisture mozzarella and more pepperoni.
