Techniques
- 2½ lb air-chilled chicken wings
- 2½ tsp kosher salt
- 2½ tsp baking powder
- 1 tsp cornstarch
In a bowl, add kosher salt, baking powder and cornstarch to the wings, one teaspoon of each per pound.
Salt, baking powder and cornstarch by the pound
Toss thoroughly to coat; arrange skin side up and evenly spaced on a baking sheet.
Refrigerate uncovered on the bottom shelf to dry; three hours here, though the written recipe says 8 to 24 hours. Water-chilled wings are better done the day before, or dried with a fan.
Preheat the oven to 450 with a rack in the upper centre, convection on if available.
- ½ cup buttermilk
- ½ cup sour cream
- ½ cup mayo
- 1 tsp granulated garlic
- 1 tsp granulated onion
For the ranch, mix about half a cup each of buttermilk, sour cream and mayo with about a teaspoon each of granulated garlic and granulated onion.
A ranch base of buttermilk, sour cream and mayo
- 2 cloves fresh garlic
- fresh parsley
- fresh dill
Press in two big cloves of fresh garlic; chop and add fresh parsley and dill.
- lemon juice
- piment d'espelette
- salt
- black pepper
- MSG
Add lemon juice, a dash of piment d'espelette, salt, plenty of black pepper and some MSG; taste, then set aside so the granulated garlic and onion rehydrate.
Why call them oven-fried
- 4 tbsp butter
- 4 cloves garlic
For the wing sauce, melt about four tablespoons of butter with about four cloves of garlic, letting it sizzle just enough to take off the raw edge without browning.
- 4 tbsp Crystal hot sauce
Whisk in about four tablespoons of hot sauce, equal parts with the butter.
Check the wings, return to the oven and bake 10 minutes more.
Pry the wings off with a thin spatula so the skin does not tear; toss in the sauce and serve with the ranch.
