Techniques
- avocado oil
Spray a 10-inch round baking pan with avocado oil, line with parchment paper and spray the parchment lightly.
Preparing the pan
- 410 g all-purpose flour
- 10 g baking powder
- 1 tsp ground cinnamon
- ½ tsp cloves
- zest of two clementines or one orange
Whisk the flour, baking powder, cinnamon, cloves and zest together.
Flour, baking powder and spices
- ¾ cup light olive oil
- 1½ cup granulated sugar
In a big bowl whisk the light olive oil with the sugar.
- 1¼ cup orange juice
- 1 tsp baking soda
Add the baking soda to the orange juice, let it froth and dissolve, and add to the bowl with the vanilla; this keeps the cake soft without the bitterness of baking soda.
Orange juice, baking soda and the batter
- 1 tsp pure vanilla extract
Add the dry ingredients and whisk until the flour is absorbed and the batter smooth; do not overmix.
- ½ cup raisins
- ½ cup ground walnuts
- 2 tsp flour
Toss the raisins and ground walnuts with a couple of teaspoons of flour so they do not sink, and mix into the batter.
Bake on the center rack at 350F for about 55 minutes to an hour and five minutes; check at 55 minutes: it should spring back, or a toothpick should come out clean or with a few crumbs.
- powdered sugar
Run a knife around the edges to release; cool in the pan 15 to 20 minutes or to room temperature, then transfer to a platter.
Releasing and cooling
Optionally dust with powdered sugar through a doily or stencil for a pattern.
