Dry rub, and what baking powder really does
Pat the wings dry with paper towels.
  • 1 kg chicken wings
  • 1 tbsp Chinese cooking wine
  • 1½ tsp sugar
  • ½ tsp dark soy sauce
  • 2 cloves garlic
  • ½ inch ginger
Toss the wings with the cooking wine, sugar, dark soy sauce and the grated garlic and ginger until well combined.
Add the dry rub and toss until no dry powder is left.
Line a baking pan with foil, set a rack on it and space the wings out on the rack.
Refrigerate uncovered 24 hours until the skin is completely dry, or dry under a fan for four to five hours.
Bake at 425F for 30 to 40 minutes.
  • ⅓ cup hot sauce
  • 1½ tbsp honey
  • 1 cloves garlic
  • ¼ tsp five spice powder
In a sauce pot combine the hot sauce, honey, grated garlic and five spice powder, bring to a simmer over medium heat and turn off the heat as soon as bubbles appear.
  • ¼ cup cold butter
Off the heat, stir in the cold butter and let the residual heat melt it; above 120C the butter breaks and the sauce separates.
Toss half the wings in the sauce until shiny and serve the rest of the sauce as a dip.
