Ingredients
Method
Techniques
  • 2 lb lean ground beef
  • queso Oaxaca
  • medium cheddar cheese
  • 3¾ cup all-purpose flour
  • 12 tbsp butter
  • 1 whole green bell pepper
  • 1 whole onion
  • 1 whole red bell pepper
  • 4 cloves garlic cloves
  • spices
  • oil
Heat a little oil in a pan over medium high heat.
Add the small-diced bell peppers and onion; saute 3 minutes.
Add the ground beef, minced garlic and spices; break up the beef and cook 7 to 8 minutes until fully cooked.
  • salt
Taste for salt and adjust; remove any grease; set aside to cool.
  • 1 tbsp sugar
  • 1½ tsp salt
In a bowl mix the flour, 1 tbsp sugar and 1.5 tsp salt; mix in the shredded frozen butter.
  • cold water
Add cold water, more if needed, and mix by hand until hydrated; knead on the counter.
Divide into 20 to 22 small dough balls.
Dip each ball in flour and roll into a thin flat disc, like a tortilla, adding flour if sticky.
Press cheese off center, add about 2 tbsp ground beef and more cheese; fold in half and seal the edges, clamping with a fork or rolling a braided edge.
Place on a baking sheet; freeze 30 minutes to 1 hour until the dough is dry.
Freezing before frying
  • oil
Fry in oil at 350 over medium heat 3 to 4 minutes until golden on both sides, watching the oil does not get too hot or the dough burns before the cheese melts.
Drain off as much oil as possible and serve immediately while crispy.
