Ingredients
Method
Techniques
- red onion
- Holland peppers
- serrano
- pasillas
- tomatoes
Chop the onion, peppers, serrano (insides removed) and tomatoes, keeping the bites small.
- oil
- chili powder
- salt
- pepper
- black beans
Season with a little oil, chili powder, salt and pepper; mix; add black beans.
- garlic
Lay out two sheets of heavy-duty foil; add the garlic to the bowl and mix; spray the foil.
Building and sealing the foil packet
- spray
Spread the mixture fairly flat on the foil so it cooks evenly, and fold and seal it into an envelope.
- flour tortillas
Heat the grill to about 350 degrees, then set it on low and cook the packet about 20 minutes.
Wrap the tortillas in foil to warm on the grill; they take about the same seven or eight minutes as the eggs.
- 3 whole eggs
Open the packet, make indentations with a spoon, crack in three eggs, season with salt and pepper and add cheese.
Adding eggs and cheese
- cheese
Close the foil gently, not all the way down, to help it steam; cook five or six minutes more until the eggs set.
Take it off, top with a little green and serve with the warm flour tortillas.
