Techniques
Strain 400 grams of ful through a sieve to remove the extra liquid.
  • 400 g ful
Crush the beans with a potato masher until they burst and form a paste.
Remove the skins by placing the mash in a sieve and pushing it through with the back of a spoon; the paste passes and the skins stay behind.
  • 3 tbsp olive oil
Add three to four tablespoons of olive oil to the bean paste until it reaches a hummus-like texture.
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¾ tsp cumin
  • ¼ tsp black pepper
  • chilli
  • 1 tbsp tahini
Add a tablespoon of lemon juice, half a teaspoon of salt, three quarters of a teaspoon of cumin, a quarter teaspoon of black pepper, a little chilli and a tablespoon of tahini.
Seasoning the mashed ful
  • 1 tsp white vinegar
  • salty or spicy pickles
Add a teaspoon of white vinegar and mix once more; pickles or pickle juice can be blended in for a stronger kick.
