Ingredients
Method
Techniques
- oil
Pour about two inches of oil into a large Dutch oven and heat over medium-high to 370F.
Heating the oil
- ¾ cup milk
- 2 whole large eggs
- 1 tsp middle oil
- 2 tbsp granulated sugar
Whisk the milk, eggs, the teaspoon of flavouring and sugar in a large bowl until smooth.
- 210 g all-purpose flour
- ½ tsp salt
- ¾ tsp baking powder
Whisk the flour, salt and baking powder in a smaller bowl.
The dry ingredients
Keep the oil at 370F: too cold and the cakes are soggy, too hot and they burn.
Oil temperature and the funnel question
Stir the wet and dry together and fold until no lumps remain; it is like a runny pancake batter.
Fill a piping bag with a half-inch opening and squeeze the batter into the oil in a circular motion to make a nest about six inches across; one at first, then two or three at a time.
Fry until deep golden brown, flip with a spider or slotted spoon, then drain on a wire rack over paper towels.
