Techniques
  • 390 g boneless, skinless fish fillets (tilapia)
  • ½ cup oil
Cut boneless, skinless fish fillets into small pieces.
  • ½ tsp salt
  • 1 tsp Kashmiri chilli powder
  • freshly ground black pepper
  • 1 tsp finely grated garlic
  • ½ lemon lemon juice
Add salt, Kashmiri chilli powder, black pepper, grated garlic and lemon juice; mix well and let sit 15 minutes at room temperature.
  • ½ tsp carom seeds (ajwain)
  • gram flour
  • rice flour
  • 1 tbsp plain unflavored yogurt
Add ajwain (or dried thyme), gram flour, rice flour, yogurt, baking powder, turmeric and salt.
The coating: ajwain, gram flour and rice flour
  • ½ tsp baking powder
  • ½ tsp turmeric powder
  • ½ tsp salt
  • water
Mix the dry ingredients with the fish without water first, then add just a splash of water for a light coating; do not use too much flour or the coating will be thick and heavy.

Heat oil on medium; test with a little batter - if it floats immediately the oil is hot enough, if it turns deep brown at once lower the heat.
Add the pieces in a single layer without crowding; do not turn for about two to three minutes, then turn.
Fry on medium-low heat until golden brown; thin fillets take only a few minutes.
Serve hot; keep large batches hot in a low oven.
