Techniques
- 227 g shrimp
- ⅓ tsp salt
- 1 tsp cornstarch
- 2 tsp Chinese cooking wine
- 300 g fresh egg noodles
- 1 oz garlic tribes
- 1 whole julienned red chilies
Bring a pot of water to a boil over high heat, about 6 to 8 minutes.
Marinate the peeled, deveined shrimp with salt, cornstarch, Chinese cooking wine and white pepper; mix well and set aside.
- white pepper
- 15 cloves garlic
Mince 15 cloves of garlic as finely as possible so it clings to the noodles.
- water
Boil the fresh egg noodles about 2 minutes, until al dente with a firm center; do not overcook.
Drain and rinse the noodles under running water to stop the cooking (fine for lo mein; not for chow mein).
- 1½ tbsp pork lard
Heat the wok until smoking hot, melt 1.5 tablespoons of pork lard, add the shrimp and stir until they turn color.
Turn off the heat and remove the shrimp, tilting the wok to leave the oil behind.
Cooking the shrimp in pork lard
- 1 tbsp pork fat
On low heat add another tablespoon of pork fat and half the garlic; when slightly golden add the rest (golden and silver garlic).
- 1 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
Add a tablespoon each of soy sauce, dark soy sauce and oyster sauce, then the noodles; fluff with chopsticks until heated and combined, then turn off the heat.
