Store broccoli in a half-open plastic bag or compost bag in the crisper, or stand the stem in a little water in a cup with a bag over it, like a flower, in the fridge.
Storing broccoli like a flower
Trim off the biggest part of the stem and keep it; trim woody, tough skin from the stem only if needed.
Cut the stems into sticks for roasting, or slice them for sauteing.
For large florets, trim at the base of each floret without cutting through the flower and pull them apart at their seams by hand; trim and pull again to divide further.
For small florets, cut straight in to take tiny microflorets, and slice the remaining stems.
