  • ½ tsp freshly cracked black pepper
  • ¼ cup parsley
  • 1 lb giant butter or lima beans
Soak the beans in cold water overnight; drain, put in a large pot and cover with lots of water.
  • salt
Salt the water, bring to a boil and boil about 35 minutes, until fork tender.
  • olive oil
Drain and transfer to a 9 by 13 inch baking dish; drizzle with a little olive oil if wanted.
  • 1 whole onion
  • ¼ cup olive oil
Meanwhile finely chop the onion and cook it in about a quarter cup of olive oil over medium heat until soft and golden.
  • 4–5 cloves garlic cloves
Add the grated garlic and warm through until fragrant.
  • 1 can canned tomatoes
  • 1½ tsp salt
  • 2 tsp dried crushed oregano
  • 2 tsp sugar
  • crushed red pepper flakes
Add the canned tomatoes pureed smooth in the blender, salt, black pepper, oregano, sugar and a little crushed red pepper flakes; mix and bring to a boil.
  • 1 cup water
Take off the heat and pour over the beans; add about a cup of water, mix and taste for salt, seasoning and acidity, adding a pinch more sugar if needed.
Bake uncovered on the center rack at 400F for 45 minutes.
  • 1 cup water
  • feta cheese
If there is barely any sauce, add another cup of water; crumble in feta.
Return to the oven at 400F for about 10 to 15 minutes more.
Garnish with finely chopped parsley.
