Techniques
  • 9-6 spray
  • brown sugar
  • all purpose flour
  • ground cloves
  • nutmeg
  • cinnamon
  • ginger
  • baking powder
  • baking soda
  • salt
  • eggs
  • milk
  • unsulphured molasses
  • sour cream
  • butter
Preheat the oven to 350. Spray a 9 by 5 inch loaf pan and line it with a little parchment paper.
Pan and ingredients
Beat the butter and brown sugar with a hand mixer until combined and fluffy; scrape down the bowl.
  • ½ orange orange zest
  • vanilla extract
Add the eggs, vanilla and the zest of half an orange; mix until well combined.
Why orange zest in gingerbread
Mix the dry ingredients together briefly: flour, ground cloves, nutmeg, cinnamon, ginger, baking powder, baking soda and salt.
Unsulphured molasses and sour cream
Mix in the molasses and sour cream.
Add the dry ingredients and the milk and whisk until just about combined; finish with a spatula to avoid overmixing, which develops gluten and makes a tough, chewy loaf.
Pour into the pan and bake at 350 for about 50 minutes to an hour, until cooked through; if the top darkens too much, tent lightly with foil. Do not overcook or the molasses burns.
  • powdered sugar
Dust with lots of powdered sugar.
