Ingredients
Method
Techniques
  • olive oil
  • 150 g white onion
Fry the small diced white onion in olive oil with salt over medium heat five to six minutes until softened and lightly coloured, then cool it in a bowl.
  • salt
  • 75 g panko bread crumbs
Spin the panko in a food processor to a powder.
  • 85 g buttermilk
Add the buttermilk and spin about 10 seconds to hydrate the crumbs into a panade.
Making a panade
  • 450 g ground beef
  • 450 g ground pork
Add the ground beef and ground pork and spin about 15 seconds to combine and break the meat down a little, stopping before it goes snappy.
  • 2 whole eggs
  • 1 whole egg yolk
  • 3 cloves garlic
Tip the meat into the onion bowl and add two eggs, one egg yolk and the minced garlic.
  • 15 g Worcestershire
  • 15 g Dijon mustard
  • 2 g poultry seasoning
  • 3 g black pepper
  • 12 g salt
Add Worcestershire, Dijon, poultry seasoning, black pepper and salt and fold gently just until evenly combined.
Pack the mixture into a loaf pan to shape it, then turn it out onto a foil lined sheet tray.
Squash, squish and rotate it into a proper loaf shape, pinching any gaps closed.
Chill the shaped loaf in the fridge.
  • 60 g brown sugar
  • 40 g cider vinegar
  • 10 g Worcestershire
  • 20 g Sriracha
  • 300 g ketchup
Preheat the broiler to medium low and stir brown sugar, cider vinegar, Worcestershire, Sriracha and ketchup together in a saucepan for the glaze.
Ketchup glaze
Sear the loaf under the broiler five to 10 minutes until the top sizzles and colours.
Lacquer on a quarter to a third cup of glaze and broil about three more minutes until sticky.
Glaze a second time and broil again, rotating the tray so the sugar does not burn.
Turn the oven down to 325F, 160C, add a third coat of glaze and bake 25 to 35 minutes without broiling.
Reduce the remaining cup and a half of glaze by about half over medium low, three to four minutes, stirring frequently.
  • 50 g butter
  • 100 g diced onions
  • salt
For the gravy, sweat the diced onions in butter with salt five minutes in a 10 inch saute pan.
Whisk in the flour and cook three to five minutes until the rawness is gone.
  • 25 g all-purpose flour
  • 450 g beef stock
Add 100 grams of beef stock, stir until thick, then add the rest and bring to a simmer.
  • 10 g beef flavored better than bouillon paste
  • 5 g soy sauce
Stir in the beef better than bouillon paste and a splash of soy sauce and simmer about five more minutes until thickened and the onions are tender.
Pull the loaf at 155F, 70C internal.
Tent with foil and rest about 20 minutes before slicing.
  • mashed potatoes
  • green peas
Serve thick slices with whipped mashed potatoes, green peas, a ladle of onion gravy and a little of the reduced ketchup glaze.
