Techniques
- ½ lb Italian sausage
Roll the Italian sausage into small meatballs about the size of the gnocchi.
- oil
Add the meatballs gently to a hot pan with oil so they keep their shape. Brown a couple of minutes on their own until they form a crust and firm up.
- ½ whole red onion
- 1 whole red pepper
Add the half red onion and the red pepper and let them soften; about five minutes in the pan so far.
Onion and red pepper
- 2 tbsp tomato paste
Add a couple of tablespoons of tomato paste and let it cook a moment for depth of flavor, then add the can of crushed tomatoes.
Building the one-pan sauce
- 1 can crushed tomatoes
- gnocchi
- water
Boil the gnocchi in a separate pot of water, a couple of minutes, until they float.
- ½ tsp smoked paprika
- salt and pepper
Season the sauce with smoked paprika, salt and pepper.
- ¼ lb mozzarella cheese
As the gnocchi float, grate in the mozzarella, add the gnocchi to the sauce and mix through.
- Parmesan
Turn off the heat, top with Parmesan and put under the broiler until browned and crisp in places. Finish with a little green.
