Ingredients
Method
Techniques
  • 140 g all-purpose flour
  • 30 g granulated sugar
  • ¼ tsp kosher salt
  • ¾ tsp baking powder
  • ¼ tsp baking soda
Combine the flour, sugar, kosher salt, baking powder and baking soda.
  • 3 tbsp melted unsalted butter
  • 1 cup buttermilk
  • 1 whole egg
  • ½ tsp vanilla extract
Add the melted butter, room temperature buttermilk, egg and vanilla and whisk just until combined; the batter should be lumpy.
  • 2 tbsp milk
Thin with a couple of tablespoons of milk, mixing gently without losing the lumps.
Use a non-stick pan with no fat in it; fat is what makes the first pancake look swirly and off.
Why the first pancake is weird
Drop a heaping third of a cup of batter in the centre and cook until bubbles rise and the ones at the edges pop and leave holes that do not close, then flip.
Hold the cooked pancakes in a 200 degree oven while the rest cook.
  • bacon
  • sausage
Cook the bacon and sausage in the same pan.
Bacon, sausage, eggs and the plate
  • 2 whole eggs
Fry the eggs sunny side up in the remaining bacon fat.
  • butter
  • real maple syrup
Plate the eggs flanked by the pancakes with the bacon and sausage, a pad of butter and maple syrup.
